The Oil Measuring Pitfall

Oils are where published charts visibly go wrong. King Arthur's figure for vegetable oil implies a density of 0.84 g/ml — lighter than any culinary oil actually is — so this site uses the USDA figure instead. If a conversion chart tells you oil is much lighter than water, it is wrong: cooking oils sit just under water, at roughly 0.91 to 0.92 g/ml.

Vegetable oil and olive oil differ by about one percent per tablespoon, so for any normal recipe amount the choice between them makes no measurable difference to the conversion. Oil is the rare case where you can stop worrying about which one the chart meant.
